I recently baked the prettiest spring cupcakes! I am not a “baker” to say, so I went simple and used a boxed carrot cake mix. I did my part to make them special by making my own Vanilla Bean Cream Cheese Frosting. I piped on the icing in the simplest way and decorated them with dried edible flower sprinkles! My Frosting Recipe: 4 cups confectionery sugar 1 brick cream cheese 1 stick unsalted butter 1 tsp vanilla bean 1 tbsp half and half Pinch of salt Add all ingredients to mixer and blend until smooth.
