Extra Fluffy Cottage Cheese Pancakes! My 2-year old has been asking for pancakes every day, so I created this recipe to make it nutrient dense way for her to get in her protein, fats and fiber in the morning!! I meal prep this on the weekend and heat 2 for her every day! These are fluffy, high-protein and SO delicious. I wanted to eat the whole batch, and you could! Macros are at the bottom of the caption! Wet (blend) ½ cup cottage cheese 2 eggs ½ tsp vanilla extract Dry ½ cup oat flour (blend oats alone first until powdery) ½ tsp baking powder ⅛ tsp salt ½ tsp cinnamon (optional_ Blend the wet ingredients for 20 seconds until smooth. Add it into a bowl along with all of the dry ingredients. Stir gently. Let it sit for 2 minutes for the baking powder to activate. Heat a non-stick skillet on medium heat. Add butter, then pancake batter. Cook for 2-3 mins each side. Finish with butter, maple syrup and powdered sugar OR whatever pancake toppings you prefer! 430 cal | 31g protein | 40g carbs | 18g fat
