Thick & Creamy Cheddar Potato Soup 🥔🧀
Ingredients
-½ stick butter
-1 white or yellow onion, diced
-2–3 cloves garlic, minced
-6–8 potatoes, peeled or unpeeled, chopped
-Chicken broth (enough to cover potatoes)
-½ cup heavy cream
-2 cans corn, drained
-1–2 cups shredded cheddar cheese (or more to taste)
-Italian seasoning, paprika, red pepper flakes, salt & pepper.
Optional: cream cheese or sour cream for extra creaminess

Toppings: green onions, sour cream, shredded cheddar, bacon crumbles, or anything you like

Instructions
In a large pot, melt butter over medium heat. Add onion and garlic, and sauté until fragrant and soft.
Add chopped potatoes and pour in chicken broth until the potatoes are just covered. Bring to a boil and cook until the potatoes are fork-tender and easy to mash.
Using a potato masher, mash the potatoes right in the pot (leave it a little chunky if you like texture).
Stir in heavy cream, corn, and cheddar cheese. Mix until the cheese melts and the soup becomes rich and creamy. For extra creaminess, add a spoonful of cream cheese or sour cream.
Taste and season with salt and pepper as needed.
Serve hot, topped with green onions, sour cream, more cheddar, or your favorite garnishes.
Easy, cozy, and absolutely scrumptious!

I was at my aunt’s over the weekend and she had the prettiest multicolored towel in her bathroom. I loved it so much I found out where it was from and went to grab one today. Now I’m thinking it’s time to paint the half bath a more neutral color so I can swap out the décor whenever I want without worrying about it clashing.

We’ve had our Neso Grande beach tent for a couple of years now, and it’s been a game-changer. It gives our family great shade, even on windy days.

We just use our kids’ sand shovel to fill the anchor bags and bury them a bit—that's kept it super secure, even in strong wind. If the wind shifts, we just move the poles to another corner. It’s that simple.

Honestly, it makes long beach days so much easier.
