Easy weeknight dinner! Linked everything I used.

Cook and shred 2–3 seasoned chicken breasts. Drain a little of the liquid from the can of beans and mix them with the shredded chicken.

Heat a separate pan and lightly spray it with avocado oil.

Place a tortilla in the pan and sprinkle on a little cheese. Add the chicken and bean mixture, then top with another sprinkle of cheese and top with a second tortilla.

Cover with a lid and cook until the tortilla is lightly browned and the cheese is melted. I had my stove set to medium heat.

I enjoyed these quesadillas with guacamole and peach mango salsa. Absolutely scrumptious!

I put together a little tea station in our Airbnb kitchenette with a tea organizer and electric kettle for fellow tea drinkers. I also keep half and half and honey on the shelf and tucked in some instant coffee, flavor packets (for bottled water) and lemon packets for extra options. They may not get used often, but I want everyone who stays with us to feel comfortable, cared for and at home in our space.

My daughter is hosting her book club and their current read is about a woodland character. 🌿📚We’re leaning into a whimsical, floral theme and these plates add the perfect touch.
