Easy weeknight dinner! Linked everything I used. Cook and shred 2–3 seasoned chicken breasts. Drain a little of the liquid from the can of beans and mix them with the shredded chicken. Heat a separate pan and lightly spray it with avocado oil. Place a tortilla in the pan and sprinkle on a little cheese. Add the chicken and bean mixture, then top with another sprinkle of cheese and top with a second tortilla. Cover with a lid and cook until the tortilla is lightly browned and the cheese is melted. I had my stove set to medium heat. I enjoyed these quesadillas with guacamole and peach mango salsa. Absolutely scrumptious!
