Evening in the life of a NYC stay at home Mom!✨

Baked Eggplant Stacks with Ricotta & Fresh Mozzarella
Ingredients
• 2 medium eggplants, sliced ¼-inch
• 2 eggs (for egg wash)
• 2 cups Italian-style breadcrumbs
• Olive oil spray
• 1½ cups marinara sauce
• 1½ cups ricotta cheese
• 1 egg
• ½ cup grated Parmesan
• 1 cup shredded mozzarella
• Fresh mozzarella slices
• Salt, to taste
Directions
Preheat oven to 425°F. Dip eggplant slices in egg wash, then breadcrumbs. Place on greased baking sheet, spray with olive oil, and bake 20-25 minutes, flipping halfway, until crispy.
Mix ricotta, shredded mozzarella, Parmesan, 1 egg, and salt. Spoon marinara onto a baking dish. Layer eggplant, sauce, and ricotta mixture, repeating until finished. Top with sauce and fresh mozzarella.
Bake 12-15 minutes until bubbly. Broil 1-2 minutes until golden. Cool slightly before serving.
