This is one of those recipes I don’t even think about, I just make it 🍅 it’s nothing overly fancy, just good, simple ingredients. Save my recipe for later ❤️

Recipe ||

Olive Oil 🫒 (a good quality oil, I use @moniniaustralia)
Garlic 🧄 (a few cloves but can you ever have too much?!)
Salt + Pepper 🧂
Fresh Tomatoes 🍅
Mushrooms 🍄‍🟫
Basil 🌿
Pecorino Romano (grated) 🧀

Add garlic, salt, pepper and olive oil to a low heat.
Simmer until golden.
Add tomatoes and cook until blistered with the lid on.
Add mushrooms, basil and cheese.
Simmer with the lid on until cooked.
I use @chasseur_cookware cast iron cookware. The heat distribution and consistency is amazing!

Pasta ||

3 cups of plain flour
3 large eggs (if eggs are organic or farm fresh you may need 5-6 eggs)
30mls of good quality olive oil
A good pinch of salt

Mix in the @kitchenaidausnz stand mixer until combined. Swap to the dough hook and knead until wrapped on the hook. Remove and hand knead on the counter. Cover and rest on the counter for 30 minutes.
Roll out using the pasta attachment or with a rolling pin on a lightly floured surface. Cut to desired type of pasta. You can dry the pasta out on a drying rack or cook straight away.
Cook in a large boiling pot of salted water until ready.

I love fashion but I also love food and these are amazing! Recipe below 🍪
115g butter
80g raw sugar (can be doubled if you like things really sweet)
100g sourdough discard
1 egg yolk
5g vanilla extract
150g plain flour
10g corn flour
3g baking powder
3g bicarb soda
200g chocolate chips (I used dark chocolate)
120g macadamias (roughly chopped)

Beat the butter and sugar until well mixed in the stand mixer. Add in the vanillas and egg yolk. Combine all of your dry ingredients into a bowl, mix. Then add to your stand mixer until well combined. Add in nuts and chocolate chips and gently mix through.
Preheat oven to 190 degrees. Roll the dough into balls and bake for approximately 9-10 minutes.
Cool on the tray for 5-10 minutes before transferring to a cooling rack to cool completely. Enjoy 🍪
