Cottage cheese mac & cheese 🧀

Creamy, protein-packed, and so easy! I doubled the recipe so we’d have leftovers. My rotary cheese grater makes it so much easier to grate cheese for this.

Ingredients
• 8oz pasta (whole wheat, chickpea, or regular)
• ½ cup cottage cheese (I used 4% milkfat)
• 1 cup milk (I used 2%)
• 1 Tbsp cornstarch
• 4oz shredded sharp cheddar (about 1 cup)
• ¼ tsp salt
• ⅛ tsp pepper
• ¼ tsp garlic powder
• ¼ tsp paprika

Cook pasta. Blend everything else until smooth, heat in skillet until thickened (4–5 min), then stir in pasta. Add more cornstarch if you like it thicker.

🎨🛁 Budget-friendly toddler bath activity! My son loves these Crayola bathtub finger paint soaps. I grabbed this little paint palette from the Dollar Tree, and it’s my son’s favorite bathtime activity! The paint palette makes it so much easier to finger paint.

🐧 This sensory bin was a hit with my toddler! Here’s how to make it:

1️⃣ Fill a large bin with water + a few drops of blue food dye. Stir.

2️⃣ In a muffin tin, freeze a thin layer of water at the bottom of each cup. (This helps the penguins slide better!)

3️⃣ Mix baking soda + water. The more baking soda, the fizzier it gets with vinegar!

4️⃣ Take the muffin tin with the frozen water, place toy penguins in each cup, and pour in the baking soda mixture.

5️⃣ Prop one side of the sensory bin up slightly, then place both the muffin tin and sensory bin in the freezer overnight.

6️⃣ Fill a squirt bottle with vinegar and let your toddler squirt the frozen penguins to watch them fizz!
