The yummiest low point strawberry cheesecake on weight watchers 🧡🧡

Strawberry Cheesecake

Ingredients

2 tablespoons reduced-fat Cool Whip – 1 point

2 tablespoons nonfat vanilla Greek yogurt – 0 points

1 sheet Kroger honey graham crackers, crushed – 2 points

1/8 package sugar-free cheesecake Jell-O pudding mix – 0 points

Diced fresh strawberries – 0 points

Splash of water or skim milk (optional, for consistency)

Instructions

Prepare the Base:
Crush the graham cracker sheet and place it into the bottom of a small serving dish or parfait glass.

Make the Cheesecake Layer:
In a separate bowl, combine the Cool Whip, Greek yogurt, and cheesecake pudding mix. Add a splash of water or skim milk if needed to reach your desired consistency. Stir until smooth and well combined.

Assemble:

My lighter version of beef stroganoff!!

🛒 Ingredients:

🥩 1 lb 90/10 lean ground beef

🌾 2–4 Tbsp all-purpose flour (for thickening)

🧴 2 sprays nonstick cooking spray

🍄 8 oz sliced fresh mushrooms

🧅 1 medium sweet yellow onion, diced

🧄 1 Tbsp minced garlic

🍝 10 oz egg noodles (uncooked)

🥬 1 bag (5–6 oz) fresh spinach, roughly chopped

🥣 1 cup plain nonfat Greek yogurt (0%)

🥤 32 oz (4 cups) reduced-sodium beef broth

🧂 Seasonings to taste: garlic powder, seasoned salt, black pepper

👩‍🍳 Instructions:

🥄 Sauté the veggies:
Spray a large skillet with nonstick spray 🧴 and place over medium heat 🔥. Add the mushrooms 🍄, onion 🧅, and garlic 🧄. Cook for 5–6 minutes until soft and translucent.

🍳 Brown the beef:
Add the ground beef 🥩 to the skillet. Season with garlic powder, seasoned salt, and black pepper 🧂. Cook until browned and fully cooked through. Sprinkle in 2–4 tablespoons of flour 🌾 and stir well to thicken.

🍜 Cook the noodles:
While the beef cooks, bring a large pot of water 💧 to a boil. Add egg noodles 🍝 and cook until al dente. Drain and return to the pot.

🥣 Make the sauce:
Pour in the beef broth 🥤 with the noodles. Bring to a gentle boil, then add chopped spinach 🥬 and cook until wilted (1–2 minutes).

🌀 Make it creamy:
Reduce heat to low. Stir in the Greek yogurt 🥣 until smooth and creamy. Add the cooked beef and veggies 🥩🍄🧅 into the pot and stir well. Simmer for 5–10 minutes, or until the sauce reaches your desired thickness.
