Bookmark this recipe for when you have overly ripe bananas. You’ll thank me later, trust me!

Ingredients
1 ½ cups all-purpose flour
2 eggs, room temperature
3 ripe bananas
½ cup butter (1 stick) at room temperature
3/4 cup white sugar
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
½ tsp real vanilla extract
½ cup chopped walnuts (raw or toasted)
½ cup shredded coconut
  Instructions
1. Preheat the oven to 350°F. Grease and flour a bread loaf pan (9.25 long x 5.25 wide x 2.75 deep).
2. In a mixing bowl, cream together 8 Tbsp softened butter and 3/4 cup sugar.
3. Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs, mixing until blended.
4. In a separate bowl, whisk together: 1 1½ cups of flour, 1 tsp of baking soda and ½ tsp of salt, ½ tsp of cinnamon, then add to batter
5. Add 1/2 tsp of vanilla extract and mix in chopped walnuts and shredded coconut.
6. Pour mixture into prepared loaf pan. Bake at 350˚F for 55-60 min or until a toothpick inserted into the center comes out clean. Let banana bread rest for 5 min before transferring to a wire rack to cool.

Pasta is the one dish that makes everyone in our home happy, even our toddler. This sauce is creamy and full of flavor.
Pro tip -sauté your shallot and garlic medium heat so the garlic doesn’t over brown. Or you can sauté the shallot first and then add the garlic a few minutes after.

Creamy tomato pepper pasta
1 shallot, diced
3 gloves of minced garlic
• 1 1/2 cups cherry tomatoes
• 1/2 cup roasted red peppers
• 1/3 cup of sun dried tomato
• 2 tsp. italian seasoning
• 1/2 tsp. garlic powder
• 1/2 tsp. BRAGG seasoning
•3/4 cup cream
• 1/2 cup parmesan
• 2 cups cooked textured pasta
optional:
1 tbsp. Torn basil leaves
1. Heat 2 tbsp. olive oil in a large skillet over medium-low heat; add shallot and garlic. Sauté for 1-2 minutes, until softened. toss in tomatoes and cook 10 minutes, or until softened
2. Add red peppers, roasted red pepper, sun-dried tomatoes, spices and cream. stir until well incorporated
4. Use an immersion blender to roughly chopped and incorporate all ingredients into a sauce.
4. Add parmesan, basil , and stir. Let simmer for a few minutes
5. Top with more Parmesan before serving

Life is busy and sometimes you just need to throw a meal together. This recipe does just that! (More details coming in my story)

INGREDIENTS
•1 package 12 pack Kings Hawaiian Rolls
•2 cups shredded chicken
•sliced cheese (are use truffle Parmesan from @traderjoes)
•3 sliced mushroom
•1/4 cup pesto
•1 tbsp dijon mustard
•2 tbsp mayo

INSTRUCTIONS
•Add pesto on the bottom of the rolls
•Layer the cheese, chicken, and mushrooms on top
•Broil the bottom potion for 4 mins on High or until the cheese has melted
•Broil the top of the rolls for 2 mins
•Add mayo and mustard to the top portion (not in my reel because Sadie was hungry and couldn’t wait 🤣🤷🏻‍♀️)
•Serve hot and enjoy!

Dinner last night
Coconut Curry Chicken

I started with a little bacon grease since I just made bacon 🙌🏼 (Pro tip if you make bacon save your bacon grease and store in the fridge. It makes every recipe more delicious.)

Then added
-Diced onions and garlic
-Chopped (half of each) green and red bell pepper
-Two tablespoons of red curry paste
-The cream from one can of coconut milk
-Five chicken breasts sliced and seasoned
-Turn the chicken halfway

Serve with rice and veggies of your choice. We had it with roasted brussels sprouts. 😉
