🎄 Christmas Fruit Cake:
Inspired by Little Women. Adapted from @ediblegarden.

Dried orange peels: 350°F, bake ~20 min, flip last 5 min.

Ingredients:
1 c flour, 1/2 c chopped cashews, 1/4 c black raisins, 1/2 c mixed dried fruit (dates, cherries, orange peel), 1/2 c sugar (caramel), 3/4 c sugar (batter), 2/3 c butter, 3 eggs, 1/2 tsp cinnamon, 1/4 tsp clove, 1 tsp baking powder, 1 tsp vanilla, 1/4 tsp salt.

Instructions:
Melt 1/2 c sugar to dark caramel. Off heat add 1/4 c water, return to heat, stir smooth, cool. Heat oven 350°F. Toss fruit/nuts with 3 Tbsp flour. Mix remaining dry ingredients. Beat butter + sugar, add vanilla. Alternate eggs and dry mix. Fold in caramel + fruit. Bake 50–55 min. Cool. Dust with icing sugar.

🍎 Baked Apples:

Ingredients:
6 baking apples, 1/2 c brown sugar, 1 tsp cinnamon, 1/8 tsp nutmeg, 1/3 c dried cranberries or raisins, 3 Tbsp butter, walnuts optional, 1 c hot water or cider.

Instructions:
Heat oven 375°F. Mix sugar, cinnamon, nutmeg, fruit. Core apples, stuff filling, top with butter (and walnuts). Place in dish, add liquid. Bake 45–60 min until tender. Spoon juices over apples. Serve with whipped cream or ice cream.
