🐟 Bang Bang Salmon Bites

Ingredients

Salmon
• 1½ lb fresh salmon, skin removed, cut into 1½-inch cubes
• 1 tbsp olive oil
• 1 tsp paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp salt
• ¼ tsp black pepper
• Optional: pinch of cayenne (if you like heat)

Bang Bang Sauce
• ½ cup mayonnaise
• ¼ cup sweet chili sauce
• 1–2 tbsp sriracha (to taste)
• 1 tbsp honey or sugar
• 1 tsp rice vinegar or lime juice

For garnish (optional but cute):
• Green onions
• Sesame seeds

Instructions

🔥 Option 1: Air Fryer (BEST texture)
1. Preheat air fryer to 400°F
2. Toss salmon with olive oil and seasonings
3. Air fry for 7–9 minutes, shaking halfway, until crispy and cooked through
4. Toss warm salmon gently in Bang Bang sauce or drizzle sauce on top

🔥 Option 2: Oven Baked
1. Preheat oven to 425°F
2. Line baking sheet with parchment
3. Bake salmon for 10–12 minutes
4. Broil for 1–2 minutes if you want extra crisp edges
5. Sauce it up ✨

🔥 Option 3: Pan-Seared
1. Heat skillet over medium-high with a little oil
2. Cook salmon in batches, 2–3 minutes per side
3. Remove from heat and toss with sauce

How to Serve
• Over jasmine rice or coconut rice
• In lettuce cups
• In tacos with slaw
• On a salad for a “healthy-ish” dinner
• Straight from the pan (no judgment)

Pro Tips
• Don’t over-sauce — toss lightly, then drizzle more
• Works great with salmon bites from Costco
• Sauce can be made ahead and keeps 4–5 days in the fridge

Another favorite look from 2025. Should I wear again in 2026?
Somehow this mix of prints just hit right for me. Also, I wore this out to tacos and great conversation with a bestie couple we’ve known and loved our entire marriage. Pre-haircut, of course. I definitely needed a new hairdo!

I’m over 50 and this is what o wore to church today. Our weather has been unseasonably warm so I’m all confused. I was pretty warm but I did like this @zara sweater over this Amazon layering tee that I’ve been raving about. The jeans that we all love have become dress-up go-to jeans for me. They are so skimming. Anyway, I e been in a big jeans kick for church, but I’m going to track down some cold weather dresses for January and step it up a bit. Do you wear jeans to church? My “Church Notes” notebook is from @target (I know, right?)

We had this for dinner last night and everyone loved. The veggies were so tasty cooked on the pan like this. I added carrots and fingerling potatoes to the pan, too. 😋

Lemon Rosemary Sheet-Pan Chicken
🍋🌿🐓
Ingredients
• 2–2½ lbs chicken thighs or drumsticks
• 2 lemons (1 sliced, 1 juiced)
• 3–4 cloves garlic, smashed
• 2–3 sprigs fresh rosemary (or 1½ tsp dried)
• ⅓ cup olive oil
• 1 tsp kosher salt
• ½ tsp black pepper
• ½ tsp paprika (optional but great for color)
• Optional add-ins: baby potatoes, green beans, or carrots

Instructions
1. Preheat oven to 425°F.
2. In a bowl, whisk olive oil, lemon juice, garlic, rosemary, salt, pepper, and paprika.
3. Toss chicken (and veggies if using) in the marinade.
4. Spread everything on a sheet pan, skin-side up. Tuck lemon slices around.
5. Roast 35–45 minutes, until chicken is golden and reaches 165°F.
6. Broil 2–3 minutes for extra crisp skin if needed.

Serve with: roasted potatoes, couscous, or a simple arugula salad.
