On The Menu: Air Fry Chicken Salad 🥗
$15 and under 30 min 👏🏼

The Lineup 🛒

• Trader Joe’s Southwestern Chopped Salad
(includes dressing, cheese, roasted pepitas & tortilla strips)
• 1 tray boneless chicken thighs
• Roma tomato
• Avocado

Chicken Seasoning 🧂

• Smoked paprika
• Onion salt
• Garlic powder
• Crunchy Chili Onion Sprinkle
• Thyme

The Method 🍴

1. Season chicken with spices above then place in air fryer paper liners and cook at 380° for 29 minutes.
2. Set timer for 14 min and flip chicken halfway through, seasoning the bottom lightly with the same seasoning.
3. Prepare salad - pour out lettuce and toss with avocado lime dressing that comes included inside.
4. Once chicken is finished, place on cutting board and slice into desired size. (Air fryer makes it crispy but so juicy!!)
5. Cut tomato, avocado and garnish with cheese and roasted pepitas that come included.

Voilà!

On The Menu: Creamy Cauliflower Gnocchi Soup 🥕🧅

The Line Up 🛒

• 1 tray boneless skinless chicken breasts or thighs
• 3-5 cloves garlic, chopped or minced
• 1 yellow onion, chopped
• 6 carrots, chopped
• 4 celery stalks, chopped
• 4 cups low sodium chicken or vegetable broth
• 1 can coconut cream
• 1/2 cup sun dried tomatoes
• 4 cups baby spinach
• 1/2 cup grated parmesan
• 1 bag frozen cauliflower gnocchi (or potato)
• 2 tablespoons salted butter
• 2 tablespoons all-purpose flour
• extra virgin olive oil
• italian seasoning
• garlic powder
• smoked paprika
• thyme
• chili flakes
• kosher salt
• black pepper

The Method 👩🏻‍🍳
1. In a large soup pot set over medium heat, combine the olive oil, onion, celery and chopped carrots. Cook until fragrant.

2. Stir in the butter and flour, cook 1 minute. Add the chicken, garlic, italian seasoning, paprika, thyme, and a pinch each of chili flakes, salt, and pepper.

3. Add 4 cups (1qt) broth and simmer over medium heat for ~ 20 minutes, until the chicken is cooked through.

4. Pull the chicken out and shred using 2 forks. Add back to the soup.

5. Stir in the spinach, sun-dried tomatoes, coconut cream/milk, parmesan, and gnocchi. Cook until warmed throughout, ~ 5 minutes. If the soup is too thick, add additional broth or water.

6. Serve the soup topped with parmesan. Enjoy 💫
