Today felt like an exhale.
The first truly warm day in months.
My toddler napped in the stroller while my oldest and I walked and talked.
Fruit bowls on the porch.
Chalk on the pavement.
Washing it away with snow like it was some kind of magic trick.

These cupcakes 🧁 are our family favorite 😍 they are gluten free and super moist!
To make:
• 3 ripe bananas
• 2 eggs
• 1 1/2 cups of oat flour (I just make my own)
• 1/2 cup of protein powder (optional you can replace by more oat flour)
• 1/4 cup of maple syrup (I use sugar free)
1/4 cup of coconut oil ( vegetable oil is ok as well)
• 1 tsp of baking powder
• 1 tsp of baking soda
• 1 tsp of cinnamon
Bake at 350 for 20 min for regular size cupcakes or ~ 15 min for mini

This is my whole family approved dinner! Not once that I have to say “eat please “! It only requires 5 min of prep work. I do cover the chicken for first 1 hr and a half and at the end take the cover off. My family likes steamed broccoli and mashed potatoes. But you could as easily serve it with roasted veggies that can go in the oven a bit later 😊
