Trust me, your family will be scraping the pan clean😋 ✨[Save this post]✨ Ingredients: For the Shrimp: • 1 lb extra-large shrimp, peeled & deveined (You can eyeball the seasoning or use the measurements below) • ½ tbsp smoked paprika • ¾ tbsp Italian seasoning • ¼ tsp black pepper • ¾ tsp salt • 1 ½ tbsp sun-dried tomato oil (from the jar) • ½ tsp Tony Chachere’s Creole Seasoning For the Sauce: • 2 ½ tbsp tomato paste • ½ cup sun-dried tomatoes • 1 tbsp Italian seasoning • ½ tsp smoked paprika • ½ tsp salt • ¾ tsp dried basil • 2 tbsp flour • 2 cups spinach • 2 tbsp butter • 2 tbsp onion • 2 tbsp minced garlic • 2 cups vegetable broth • 1 cup heavy cream • 1 cup parmesan cheese • Fresh basil (for garnish) • 12 oz penne pasta, cooked Directions: Boil your pasta, drain and set aside. Add sun-dried tomato oil (not the tomatoes) to a pan and add the shrimp, then season with paprika, Italian seasoning, salt, black pepper, and Tony Chachere’s Creole Seasoning. Cook for about 2 minutes per side. Then set aside. In the same pan, melt the butter, then add garlic, onion, sun-dried tomatoes, tomato paste, Italian seasoning, paprika, salt, and dried basil. Let that cook for about 2 minutes. Stir in the flour, then pour in the vegetable broth and heavy cream. Add the spinach and let it cook down until the sauce thickens and the spinach wilts—about 5 minutes. Stir in the parmesan cheese until melted, then toss in the pasta.
