Holiday Arugula Salad2 cups arugula1 cup mozzarella pearls1 cup mini cherry tomatoes*Optional balsamic glaze*Add the mozzarella pearls to the snowflake mold and microwave for 10 second segments checking frequently just until the cheese becomes soft and slightly forms to the shape of the mold. Use paper towel to remove excess liquid then pop in the freezer for 5 minutes. Arrange arugula in a wreath shape then add tomatoes and mozzarella snowflakes. Add some balsamic drizzle if you like and serve with your favorite dressing on the side.
