This Mexican Street Corn deserves a spot at every summer cookout 🌽 It’s one of my go-to easy summer recipes because it only takes a few minutes to make, it’s great to make ahead for parties, and it pairs perfectly with all of your grilling favorites. Total Time: 20 mins Prep Time: 5 mins Cook Time: 15 mins Yield: 6-8 servings INGREDIENTS • 6 – 8 medium ears sweet corn, husks & silk removed • ½ cup sour cream • ½ cup mayonnaise • ½ cup minced fresh or 1 tablespoon dried cilantro • 1 clove minced garlic • 1/4 – 1/2 tsp ground chipotle pepper • 2 tsp lime zest • 2 Tbsp lime juice • ½ cup cotija cheese (can sub in grated parmesan or feta cheese) DIRECTIONS 1 Heat grill to 400°F. 2 Whisk together the sour cream, mayo , cilantro, garlic, chipotle pepper, lime zest & juice. 3 Grill the corn, turning ears until golden brown on all sides. 4 With a brush or spoon coat each ear with sauce.
