Some recipes just taste like summer and this Citrus Shrimp & Avocado Salad is one of them ☀️🥑🍤 This is one of my mom Gail’s go-to recipes and I had so much fun making it with my bestie and this week’s Tara Time special guest, Markcharles Misilli! This salad is fresh and light but packed with flavor and it can be served as an entree or as a side dish. It’s one of those recipes that looks so pretty for summer entertaining but it’s so easy to make with just a few ingredients! Try out the recipe below! Prep Time: 20 mins Cook/Cool Time: 15-20 mins Yield: 4-6 servings INGREDIENTS • 4 – 6 cups salad greens • 2 avocados peeled & sliced • 1 – 2 lbs medium shrimp, peeled & deveined • 3 garlic cloves, minced • 1 small shallot, diced • 1 Tbsp parsley, chopped • 1 medium orange, cut into slices • 1 lemon, sliced • 2 Tbsp olive oil • ¼ tsp red pepper flakes (or more, as desired) • 1 cup orange juice • ½ cup lemon juice • Kosher salt and ground black pepper, to taste DIRECTIONS 1 In a medium bowl, whisk together the olive oil, orange juice, lemon juice, garlic, shallot, ½ parsley, and red pepper flakes. 2 Pour the mixture into a large skillet over medium heat. Bring to a simmer and cook for 5 minutes (should reduce almost by half). 3 Add the shrimp, season with salt & pepper, cover and cook until they turn pink. 4 Spoon shrimp with the sauce over the greens.
