It’s fall… but in Atlanta that means boots + short sleeves. Because it was in the 50s this morning and by noon I had the air conditioning blasting. Yep…we’re still sweating while buying pumpkin spice.

Fall style, Atlanta edition: jeans, boots, and a tee. Because you never know if you’ll need a sweater or sunscreen. Also pro tip: to add a little structure to your tee, use a hair tie to cinch it then tuck it under.

HIGH PROTEIN ICED SHAKEN ESPRESSO // Fun fact: I am always caffeinated. Yes, coffee is my love language. When I go to my fave coffee shop, I usually order a sugar free iced shaken espresso with 1 splenda. Sometimes I get fancy and order it with sugar free vanilla.

But it’s not a cheap purchase, so I usually make it at home during the week and treat myself at the coffee shop on the weekends. Bonus of making it at home: in addition to saving some coins, I get to personalize it and ramp up my protein…again for free!

Here’s how I make mine:
* In a heat resistant glass, add 2 scoops of collagen protein powder and a packet of Splenda.
* Pull 3 shots espresso (or 3 tbsp instant coffee in hot water). My faves for my Nespresso Vertuo are Diavolitto (used here) and Altissio.
* Add the hot espresso to the glass and stir until dissolved (I usually use my frother here, but when the batteries give out, a spoon works just fine. Stir like you mean it!)
* Add ice and cover and shake what your mama gave ya (You’ll know it’s ready when you see the froth form. If you’re using a cocktail shaker, you’ll know it’s ready when the outside of the shaker is frosty.)
* Add milk of choice (I used about a cup of almond milk) and add anything else you’d like - I used sugar free salted caramel syrup but cinnamon or vanilla would be great too.
* Top with more ice and you’ve got a protein rich, sugar free yummy iced shaken espresso

Mine comes in at 19 grams of protein and 1 WW point. Winning!

PB&J PROTEIN SMOOTHIE // This smoothie gives me all the PB&J vibes but with the nutrients that keep my belly (and my WW tracker) happy. Full, satisfied, and fueled…that’s a win.

PB&J Protein Smoothie (1 serving):
* 1 (11 oz) vanilla protein shake
* 1 medium banana
* 1 tsp vanilla extract
* 4 frozen strawberries
* 2 tsp peanut butter (or powdered PB)
* 1 cup ice
* Optional: 1 packet Splenda

Blend it all up and sip your way to that childhood favorite without derailing your goals. I love when hitting my wellness goals tastes good. Winning!

WEEKNIGHT CHICKEN POT PIE // Chicken pot pie just feels like home. It’s warm, nostalgic, and the kind of comfort food that makes any night feel special, even when you take a few shortcuts. Here’s my easy weeknight version (aka, comfort made simple).

You’ll Need
- 1 refrigerated pie crust
- 2 diced skinless rotisserie chicken breasts (Mine were from Costco and they’re huge.)
- 1 (12 oz) package frozen mixed vegetables
- 1 cup frozen potatoes (I used hashbrowns)
- Any remaining broth from the rotisserie container
- 1 tsp Better Than Bouillon chicken
- 1 (10.5 oz) can cream of chicken soup (reduced fat works great)
- 1 can water

To make:
1. Preheat oven to 375°.
2. Mix chicken, veggies, potatoes, broth, bouillon, soup + water in a bowl.
3. Pour into a baking dish, top with crust, crimp edges, and cut slits for venting. Or if you’re fancy like me, lattice the crust.
4. Cover loosely with foil and bake for about 25 minutes.
5. Remove foil and cook for another 5-10 minutes, or until crust is golden.

Slice, serve, and savor the comfort.

This recipe makes about 6 servings, 9 WW points with reduced fat cream of chicken soup, 10 points with the regular cream of chicken soup.

I love a good make ahead meal and these breakfast sandwiches are great. The key to meal prepping is having everything you need at your fingertips. I’ve tagged the things that made this go super smooth.
Baking sheet whisk bamboo salt and pepper measuring cup silicone oven mitt
Recipe (6 sandwiches)
* 6 large eggs
* ½ cup liquid egg whites
* 12 Jimmy Dean Heat ‘n Serve turkey sausage patties
* 6 whole wheat English muffins
* Salt & pepper
* Cooking spray

Instructions
- Whisk together eggs & egg whites with a pinch of salt + pepper.
- Spray a baking sheet with cooking spray.
- Pour egg mixture onto pan and bake at 350°F for 15 minutes.
- Remove from oven, cut eggs into squares or circles.
- Layer each sandwich: English muffin + 2 egg slices + 2 sausage patties.
- Wrap in wax paper and place in original English muffin wrap (if refrigerating) or a large freezer bag (if freezing)
- Keeps in the fridge for a week

To heat
* Leave sandwich in parchment paper and heat in microwave for about 30-45 seconds (if refrigerated) or about 1 minute (if frozen)
* Carefully remove from microwave and enjoy
