This week felt like a little preview of spring around here and honestly it made me so excited for the season ahead. 🌿 From a secret garden inspired tablescape that looks like it came straight out of a storybook, to cute and comfy tops perfect for a fresh spring wardrobe, there were so many little moments that made this week fun. We also made one tiny change in our kitchen that made a surprisingly big difference. Swapping our cabinet knobs for pulls was such a simple upgrade but the impact is huge and it feels so much more polished now. I also shared the cutest colorful three layer necklace that instantly brightens any outfit and the most adorable little entertaining idea… carrot ice cubes for spring brunch mimosas. I didn’t realize how much I loved March until I looked back at the moments.

Three cute and easy additions to your Spring grazing boards.

1. Babybel bunnies. I used Babybel cheese for the base and Tillamook Sharp White Cheddar slices for the ears. 🐰

2. Orange pepper stuffed with cream cheese and a sprig of fresh dill to make carrots. 🥕

3. Radish mushrooms 🍄 These were so much easier to make than I thought they would be! I think they’re just adorable!

Who’s coming over for chips and salsa? This is seriously the best tomatillo salsa ever! I make this on repeat the entire Summer!

Roasted Tomatillo Salsa

8-12 tomatillos, husks removed
4 serrano peppers, stems removed
1 cup water
2 tbsp chicken bouillon
1 whole head of garlic, peeled
¾ white onion, quartered
1 handful cilantro
½ tbsp Kosher salt

Husk and wash the tomatillos and Serrano peppers. Add to a cast iron skillet and char on all sides.

Add one cup water, chx bouillon, and garlic to a sauce pan and boil for apx 15minutes.

Rough chop onion and cilantro and toss into blender.

Add the tomatillos, peppers, and garlic/bouillon mix into blender.

Blend until desired consistency.

Be forewarned, this is highly addictive!! (And a little spicy!) 🌶️
