Big Red poke cake is one of those fun, nostalgic desserts that always gets people talking ♥️ I made this for my mom’s birthday the other day, and it would be so perfect for summer get-togethers, birthdays, BBQs, or anytime you need an easy crowd-pleaser. 😋 It’s cold, fluffy, and so good straight from the fridge. Big Red Poke Cake Recipe: • 1 box yellow cake mix (plus ingredients listed on box) • 1 cup Big Red soda • 1 box cherry gelatin • 1 box vanilla instant pudding mix (3.4oz) • 2 cups of milk • 8 oz tub of frozen whipped topping, thawed • Strawberries for topping (optional) Directions: 1. Bake 1 box of yellow cake mix in a 9x13 pan according to box directions. Let cool slightly. 2. Use the handle of a wooden spoon to poke holes all over cake. 3. Slowly pour 1 cup Big Red over cake so it soaks into holes. Bring 1 cup of water to a boil and add in your small box of cherry gelatin. Slowly pour this over the cake (you could mix the big red and gelatin together if you wish).Chill 15–20 mins. 4. Mix pudding mix + milk until thickened, then spread over cake. 5. Top with whipped topping. 6. Chill at least 2 hours (best overnight). 7. Top with strawberries before serving.
