Stuffed peppers 🫑 🫶🤍 Ingredients • 1 lb ground beef • 1 small yellow onion, diced • 1 clove garlic, minced • 1 tbsp olive oil • 1 large carrot, shredded (about ½ cup) • 1 bunch asparagus, diced (about 2 cups) • 1 tsp chili powder • 1 tsp garlic powder • 1 tsp black pepper • 1 tsp dried thyme • 1 tsp red pepper flakes (optional, to taste) • 2 cups (or more) Monterey Jack + cheddar cheese combo • 1 cup cooked rice (white or your fave) • 4 large bell peppers, cut in half Instructions 1. Preheat oven to 350°F. 2. In a large skillet, heat olive oil. Add onion + garlic, sauté until fragrant. 3. Add ground beef, season with salt + pepper, and cook until browned. 4. Stir in shredded carrot + diced asparagus. Let soften a few minutes. 5. Mix in chili powder, garlic powder, thyme, black pepper, and red pepper flakes. 6. Cook rice separately, then add it into the beef/veggie mixture. Stir in a handful of cheese to help it bind. 7.Prep peppers: cut in half, bake for 10 minutes to soften. 8.Fill each pepper with the mixture, top generously with cheese. 9.Bake at 350°F for 15 minutes.
