Grab your Dutch oven or a large pot!
Chop a yellow or white onion, 2 large carrots and 3 celery stalks. Dice 3 cloves of garlic. Take alll that & sautée them together with olive oil for 5-10 minutes. You’ll want to add garlic powder,dried thyme,dried basil and dried parsley (measure with your heart but at 1/4 teaspoon of each) Add two large chicken breasts and 4 cups of chicken broth. Bring to a boil then let simmer for 1 hour. Shred the chicken breasts after & add your noodles at the end or cook on the side. I use half a box of Mac noodles because I like hearty it feels with bigger noodles. Add salt and pepper to taste. Freeze or refrigerate left overs. I say 3 days MAX for the fridge.
