welcome to day three of CROCKTEMBER 🍂😍 by the end of this series I promise you will love your crockpot again!! You’ll walk away with several crockpot recipes in your back pocket that you can fall back on when life gets busy!

If you’re new here, hi 👋 my name is Jade and I have three kids all under the age of 7 so my meals have to be toddler and kid friendly! That’s super important around here 😂 If you’re in that stage too, you’ll love it here. Be sure to follow along for the next one! WHAT YOU NEED FOR CREAMY SOUR CREAM CHICKEN ENCHILADAS:
- 1.5 pounds thin chicken breast (I seasoned mine with a taco packet)
- 3 tbsp butter
- 3 tbsp flour
- 1 cup chicken broth
- 3/4 cup salsa verde or green enchilada sauce (either works great)
- 1/2 cup sour cream
- 1 cup milk
- flour or white corn tortillas
- monterey jack cheese
- seasoning for sauce: 1 tsp the blend, 1/2 tsp cumin, 1 tsp onion powder
Toppings: (optional) jalepenos, sour cream, hot sauce, shredded cheese, tortilla chips

Combine your flour and butter and whisk until no clumps. (If you don’t have this kind of crockpot the sauce can be made on the stovetop in the exact same way and then just pour it in) slowly whisk in your chicken broth until it thickens. Add your milk and salsa verde and whisk until combined. Add sour cream and whisk. Season and add your thin cut chicken breast. (Can use thick, just will change cooking times) top with one small can of green chilis and cook on low for 4 hours. Shred chicken, add your tortilla strips, and top with cheese. Let melt for 20 minutes and serve. Goes great with a side of Mexican rice!!

Right now sports and cheer are controlling our evenings and sometimes we are eating different times, so my crockpot saves me this time of year while we’re getting back into routines.

WHAT YOU NEED FOR THIS EASY CROCKPOT CHILI MAC:
Ground beef
Onion (diced)
1 15oz can fire roasted diced tomatoes
1 8oz can tomato sauce
1 can chili beans (don’t drain)
Beef broth I used the small box (16oz)
1 tablespoon minced garlic
Either a chili seasoning packet or: (1 tbsp chili powder, 1 tsp onion powder, 1 tsp the blend, 1 tsp paprika, dash of cumin)
2.5 cups macaroni noodles
Shredded medium cheddar cheese (reserve some for topping)
Toppings optional: cilantro, sour cream, jalapeños, shredded cheese

*this one is really good with corn bread!!

Cook ground beef and onions and season with half of your seasoning mix, add diced tomatoes, tomato sauce, chili beans, beef broth, garlic, and remaining seasonings. Stir. Set crockpot on high for 3 hours or low for 6. Add 2.5 cups macaroni noodles and shredded cheddar and let cook until noodles are soft and broth is absorbed. About 20-30 minutes. Serve with toppings and cornbread.
