For the last 10 years, we’ve done a North Pole breakfast on December 1st… but this year I decided to switch it up. 🎅🏼✨
The kids are older, mornings are crazier, and honestly — an after-school surprise just felt right.

So this year, we did a North Pole Snack instead!
I put together a cute little table, set out their Christmas pajamas (in the Santa decks), and made a few quick and easy Christmas-themed snacks for an after-school charcuterie board. Nothing fancy — just simple little treats that came together fast but still felt magical. ❤️

A new twist on one of our favorite traditions… and I think this might be our new thing. 🎄

Dump-and-Bake Chicken Broccoli & Rice Casserole 🥦🧀

Dinner doesn’t get easier (or tastier) than this creamy, cheesy, one-dish casserole! Perfect for busy weeknights, this crowd-pleaser is packed with chicken, broccoli, and rice—all baked together for ultimate comfort food vibes.

Ingredients:
• 2 cups uncooked rice
• 1 can cream of chicken soup
• 1 can cheddar cheese soup
• 2 cups chicken broth or water
• 2 cups broccoli florets
• 2 cups cooked, shredded chicken
• 1-2 cups shredded sharp cheddar cheese

Instructions:
1️⃣ Dump 2 cups of uncooked rice, cream of chicken soup, and cheddar cheese soup into a 9x13 casserole dish. Add 2 cups of chicken broth and stir until combined.
2️⃣ Mix in 2 cups of cooked broccoli florets and 2 cups of shredded chicken. Toss in a few handfuls of shredded cheddar cheese and stir everything together.
3️⃣ Bake uncovered at 350°F for 20 minutes.
4️⃣ Pull out the dish, sprinkle with more shredded cheese, and bake for another 5 minutes until the cheese is perfectly melted.

That’s it—dinner is ready! 😍 Serve it up and watch your family go back for seconds.

🍝 DUMP & BAKE MEATBALL CASSEROLE 🍝
This dinner is perfect for busy nights! No need to cook the pasta ahead of time—just dump it all in and bake. Here’s how to make it:

Ingredients:
• 16 oz box of uncooked rotini
• 3 cups water
• 1 jar pasta sauce (44 oz)
• 14 oz bag of thawed frozen meatballs
• 1 tsp kosher salt
• 2 cups shredded mozzarella

Instructions:
1️⃣ Preheat oven to 425°F. Spray a 9x13 baking dish.
2️⃣ Add uncooked pasta, water, sauce, meatballs, and salt to the dish. Cover with foil.

🍝 Easy Crockpot Ground Beef Baked Ziti Recipe! 🍝

Looking for a cozy, one-pot dinner that’s a hit with the whole family? Try this crockpot baked ziti—so easy to make and full of cheesy goodness. Perfect for busy weeknights or when you need a comfort meal!

Ingredients:
• 32 oz ricotta cheese
• 2 large eggs
• 1 tsp salt
• 1 tsp dried basil
• 1/4 tsp pepper
• 1/4 cup grated parmesan cheese + more for topping
• 48 oz marinara sauce (2 jars, 24 oz each)
• 12 oz gluten-free penne pasta
• 16 oz shredded mozzarella cheese
• 1 lb ground beef

Instructions:
1. Brown ground beef on the stove until cooked through.
2. In a bowl, mix ricotta, eggs, 1 cup mozzarella, 1/4 cup parmesan, basil, salt, and pepper.
3. Spray your crockpot with non-stick spray and layer the bottom with marinara sauce.
4. Add half of the ground beef, followed by a layer of pasta.
5. Drop 5 scoops of the ricotta mixture and top with mozzarella cheese.
6. Repeat the layering 2 more times.
7. Finish with a layer of sauce, mozzarella, and parmesan.
8. Cook on HIGH for 2-2.5 hours.

That’s it! A delicious meal made right in your slow cooker & it’s so good heated back up as leftovers! 🍽️

This is the perfect dump-and-go recipe for busy nights! Super simple and packed with flavor. Here’s what you need:

🥘 Ingredients:
• 1 red, yellow, & green bell pepper (sliced)
• 1 yellow onion (sliced)
• 4 garlic cloves (minced)
• 16 oz jar salsa
• 2 lbs boneless chicken breasts
• 1 packet fajita seasoning
• ½ cup water

Instructions:
1️⃣ Add half the salsa, peppers, and onions to the crockpot.
2️⃣ Sprinkle garlic, then add chicken and fajita seasoning.
3️⃣ Top with the remaining salsa, peppers, onions, and water.
4️⃣ Cook on low 6-8 hrs or high 3-4 hrs.

🍽️ CROCKPOT CHICKEN POT PIE 🍽️
Looking for an easy, family-approved dinner? This crockpot chicken pot pie is the perfect comfort food, and the best part? The slow cooker does all the work!

Ingredients:
• 2 lbs boneless, skinless chicken breasts or thighs
• 2 cans cream of chicken soup (10.5 oz)
• 1 can cream of celery soup (10.5 oz)
• 12 oz frozen mixed vegetables
• 2 tsp garlic powder, divided
• 2 tsp onion powder, divided
• 2 tsp black pepper, divided
• 1 can homestyle biscuits (16.3 oz)

Directions:
1️⃣ Spray your crockpot with non-stick spray. Place chicken breasts at the bottom, and season with 1 tsp each of garlic powder, onion powder, and black pepper.
2️⃣ Pour the cream of chicken and celery soups over the chicken.
3️⃣ Add the frozen mixed veggies on top, then sprinkle the remaining garlic powder, onion powder, and black pepper.
4️⃣ Cook on LOW for 6-8 hours, or HIGH for 4-6 hours, until the chicken is cooked through and easy to shred.
5️⃣ About 15-20 minutes before serving, bake your biscuits according to package instructions.
6️⃣ Shred the chicken in the crockpot, mixing it with the gravy and veggies. Serve with a warm biscuit, or split the biscuit and top it with the chicken pot pie mixture.
