One skillet burrito bowl that’s healthy, easy, and perfect when you’re only cooking for 2 or 3. 🌯
This is one of those throw everything in the pan dinners that somehow tastes even better the next day, which makes it ideal for lunch leftovers. I used lean ground turkey and quick-cook brown rice to keep it lighter, but it’s super flexible with whatever you have on hand.
If you’re looking for an easy weeknight dinner, simple healthy recipe, or meal prep idea that doesn’t require a million dishes, save this one.

Olive oil cooking spray
2 bell peppers, diced
1 lb lean ground meat (I used ground turkey)
14.5 oz diced tomatoes
1/2 cup quick-cook brown rice (I love Aldi organic)
1 cup organic low-sodium chicken stock or broth
1/4 cup black beans
1/4 cup corn
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp cumin
2/3 cup shredded cheese
Fresh cilantro
Chopped green onion

Instructions
Coat a large skillet with olive oil spray and sauté meat until cooked through.
Add bell peppers and diced tomatoes; simmer 3–4 minutes.
Stir in rice, broth, beans, corn, and spices. Bring to a boil, then reduce heat, cover, and simmer 15–20 minutes (or according to rice package) until rice is cooked.
Remove from heat, add cheese, cover, and let melt for 5 minutes.
Adjust seasoning to taste. Top with cilantro and green onion and serve.
Optional toppings (highly recommend):
Olives, fresh lime, avocado, and plain Greek yogurt 🤌

If you’re dreaming about the Chick-fil-A Honey Pimento sandwich like I am, this one’s for you 😍🔥. Same spicy sweet, savory goodness of the OG, made at home in just a few easy steps. Total crowd pleaser, teen approved, and perfect for game days or an easy weeknight win.

Ingredients:
• 1 frozen Red Bag chicken breast (get at Aldi)
• 1 brioche bun
• 3 tbsp hot honey sauce
• ¼ cup pimento cheese dip
• 1 tbsp pickled jalapeños

Directions:
Air fry frozen chicken at 400°F for 10–12 minutes. Remove chicken, add bun, and air fry for 1 minute until lightly toasted.
Drizzle chicken with hot honey, coating both sides generously.
Assemble: bottom bun + jalapeños + hot honey chicken + pimento cheese + top bun.
Squish (important step 😉) and serve immediately with extra hot honey for dunking.

Pimento

4 oz Sharp White Cheddar shredded
4 oz Smoked Gouda shredded
¼ cup Mayo
2 tablespoon Sour Cream
4 oz Diced Pimento Peppers
Dash of Garlic Powder
Dash of Kosher Salt
Dash of Smoked Paprika
Mix together with hand mixer. Chill for 30 min.
