Bang bang chicken skewers might be my new favorite thing we’ve made on the grill lately 🍢🔥. These are SO easy and seriously so good for spring and summer nights.

Recipe:
• 1 lb chicken breast, cut into bite-sized pieces
• Thread onto skewers
• Season with olive oil, garlic powder, paprika, salt + pepper
• Make the bang bang sauce and divide it in half — brush one half onto the chicken before grilling
• Grill 4–5 minutes per side
• Brush with the remaining bang bang sauce the last couple minutes.

Sauce:
½ cup mayo
2 tbsp sweet chili sauce
1 tbsp sriracha
1 tsp honey

Top with green onions and serve with rice or a cucumber salad. Easy enough for a weeknight but feels a little extra 🤍

Also loving my reusable skewers and grill trays lately — they make grilling so much easier.

Cheesy, crunchy, and so so good, this Brussels sprout salad is on repeat lately and disappears every single time. Perfect to serve to a crowd or for a weeknight dinner.

Easy Cheesy Brussel Sprouts Salad
Ingredients
1½ lbs Brussels sprouts
4 tbsp olive oil (divided)
1 tsp salt
½ cup sliced olives
½ cup chopped artichoke hearts
½ cup chopped roasted red peppers
1 cup finely grated Parmesan or any hard, salty cheese
1 tbsp red wine vinegar
2 tbsp lemon juice
½ cup toasted breadcrumbs
Instructions
Thinly slice the Brussels sprouts (they don’t have to be perfect!). Set aside about 1 cup raw for later.
Heat 1 tbsp olive oil in a large pan. Add the rest of the Brussels sprouts with salt and cook for about 2 minutes, just until slightly softened and bright green.
Transfer to a big bowl and toss with olives, artichokes, red peppers, and cheese (it’ll get a little melty—so good).
In a small bowl, whisk together the remaining olive oil, vinegar, lemon juice, and a pinch of salt.
Pour dressing over the salad, add the reserved raw Brussels sprouts, and toss everything together. Taste and adjust with more lemon or salt if needed.
Top with toasted breadcrumbs and extra cheese before serving.
