This Summer Pasta has been a favorite in my family forever! You only cook the pasta and mix it in with a fresh bruschetta! Here are the details! Summer Pasta Ingredients: • 1 lb linguini • 3 large tomatoes, diced small • 1/2 cup fresh basil, sliced thin • 8 oz Parmigiano Reggiano or Parmesan, cubed small • 4 garlic cloves, minced • 1/2 cup olive oil • 1/2 cup pine nuts, toasted • 1/2 tsp salt • 1/4 tsp black pepper Instructions: Bring a large pot of salted water to a boil and cook linguini “al dente” according to package directions. While the pasta cooks, toast pine nuts in a pan over medium heat until golden, stirring often. In a large bowl add tomatoes, basil, Parmesan, garlic, pine nuts, salt, and pepper to the bowl. Toss to combine. Drain the hot pasta and immediately add it to the tomato mixture. Add olive oil and mix well until everything is evenly combined and the cheese starts to soften.
