Line a baking sheet with unbleached parchment paper. Cut the butternut squash in half length wise. Sprinkle it with salt and pepper. Bake for approximately 40-50 min or until soft when poked with a fork. Scrape the inside of the butternut squash halves into a blender along with the vegetable broth. Blend until smooth.
