This creole okra shrimp and sausage meal is so so good and a family favorite. Recipe below: 

	•	2 tablespoons olive oil
	•	1 green bell pepper, chopped
	•	1 small onion, chopped
	•	2 (14.5 ounce) cans diced tomatoes
	•	3 cooked andouille sausage, cut into quarters
	•	1 (10 ounce) package frozen cut okra, thawed
	•	2 tablespoons Cajun seasoning, or to taste
	•	2 teaspoons salt
	•	2 pounds peeled and deveined medium shrimp (30-40 per pound)

Heat the olive oil in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes and simmer for 10 minutes, then add the okra, sausage, Cajun seasoning, and salt. Cover and cook for 30 minutes. Stir in the shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the center, 8 to 12 minutes.
Ingredients:
1 lb box ziti
1 Ib 99/1 lean ground turkey
1/2 small yellow onion (100 g) diced
2 24 oz jars marinara sauce
1 tsp each: dried oregano, basil, garlic powder
1/2 tsp ground thyme
pinch red pepper flakes - optional
3 cups fresh spinach (64 g) roughly chopped
5 oz mozzarella cheese (140 g) ~ 1 2/3 cups
1 cup 2% low fat cottage cheese
1 oz parmesan cheese (28 g) ~1/3 cup fresh grated
fresh basil or parsley - optional, to garnish
Instructions:
1. Preheat oven to 400 F and lightly grease a 9x13 glass
baking dish.
2. Bring a large pot of salted water to a boil. Cook pasta according to box instructions until al dente. Drain and rinse with cold water to stop cooking.
3. Meanwhile, set a large deep skillet on medium high.
Spray with oil, add turkey and onion and cook, breaking turkey apart into small pieces (~5 min). Season with salt and pepper (I do 1 tsp salt, 1/2 tsp pepper).
4. Reduce heat to medium low and add marinara, dried oregano, basıl, garlic powder, thyme and red pepper tlakes.
Gently simmer 10-15 minutes. Add spinach during the last
2-3 minutes.
5. In the baking dish, layer 1/2 pasta, 1/2 sauce, cottage cheese and 1/2 mozzarella. Repeat with remaining pasta and sauce, then top with mozzarella and parmesan. Bake for 20 minutes.
