DINING ROOM REVEAL

Over the last few weeks you’ve seen us add greenery, remove shelves, patch and paint, hang photos, disassemble then build a table. Finally the dining room is complete and we’re ready to host Easter in a few short weeks!

We’d had our old table for 10 years and while I wanted a new Pottery barn one, reality set in that I still have young, messy kids and I just don’t want to stress about them ruining an expensive set and want to be sure they can still be kids. This dining set— extending table with leaf built in and 6 chairs— is on sale for $850!! Pro tips for those messy kids: scotch-guard the fabric, lay down a machine washable rug, and even add some machine washable chair covers when you don’t need to impress.

DINING BUFFET REFRESH

About 2 years ago we added shiplap and shelves to the buffet. Regardless of the multiple brackets, the shelves to top heavy to bear much weight and I was ready for a more minimalistic and modern refresh.

When I saw a BOGO on frames last week, I ran to Target for some large matted frames for the area.

You may recall in IG stories that I’d planned to do this project but a while back Ryan shared with me that he missed being involved in the projects; so you will see more of him when it comes to projects going forward. I won’t complain because with 4 hands, I may get more done. 😆

I told y’all that I loved my new olive tree in my bedroom. I truly wasn’t kidding— I bought the 7 foot tree for my living room. Best part is the 6 foot is under $50 and this 7 foot is under $60! Such a steal!

I also love this iRobot Roomba J6 so much! I got it in November during Prime Days and I love that it self empties for about 1 month for my size home. It will clean the whole house, returning to charge and empty the container as needed. I can set a schedule, designate certain areas for the schedule or for a one-time vacuum. It’s also compatible with Alexa. Highly recommend it!

Still a favorite at home cappuccino made with my Nespresso Vertuo Next and aeroccino. My Nespresso machine and aeroccino (milk frother) are 25-40% off on Amazon. Linking a similar one at Target that’s under $100!

Recipe:
1 Starbucks Blonde pod
1 tsp SF vanilla syrup
1/3-1/2 cup whole milk
1 Tsp brown sugar
1/4 tsp cinnamon
1 dash Pumpkin Pie Spice

Brew pod and add vanilla. In the aeroccino add remaining ingredients and use cappuccino setting. Top espresso with milk. Enjoy!

Apple Cinnamon Pancakes 🍎

The perfect Fall pancakes and so easy to make! My kids went back for seconds and thirds. ❤️

Looking for a large pan for family meals, or pantry storage for your cooking supplies? I’m linking them!!

1.5 cups pancake mix (I prefer @kodiakcakes)
1 cup applesauce (or 2 packages of applesauce)
1/4 cup brown sugar
1 Tablespoon Cinnamon
1.5 cups Almondmilk

Preheat a pan on medium-low heat. Meanwhile combine all ingredients in a bowl. Spray the pan with coconut oil. Add 1/4 cup mix to the pan for each pancakes. Makes 1 dozen 4” pancakes! Serve with maple syrup or you can make a cream cheese or icing to put on top.

Low-Cal Quiche
Looking for an easy and delicious low-cal breakfast? We loved this spin in a quiche! This version was 5 WW pts for 2 slices but you can swap for fat free cottage cheese and a low-carb tortilla to make it even lighter.

Linking similar kitchen tools from the new Target Figment line so you can make this quiche today!!!

1 burrito size tortilla
3 large eggs
1/3 cup cottage cheese
1/4 cup diced tomatoes (fresh or drained canned)
1 cup fresh spinach
4 slices microwave bacon, cooked and crumbled
1 oz low fat cheese

Preheat oven to 350°F and lightly spray a pie dish with cooking oil. Add tortilla. Add eggs and cottage cheese and mix them together. Layer with tomatoes, spinach, bacon and eggs. Cook about 25 minutes.
Transfer to a cutting board and cut into 6 slices.

I cannot believe my sweet boy turns three today. I remember this day three years ago— I was dilated to 5cm at the time of induction and all it took was my doctor breaking my water. Labor was fast and furious. His heart rate dropped with every contraction, and my nurse quickly inverted me and added fluid back to the amniotic sack. Shortly after was go time, but they prefaced emergency c-section was likely if I couldn’t get him out quick. He was out in about 3 minutes, unfortunately with the cord wrapped around his neck. While his labor was wild, he was my easiest baby; but he’s growing wild lately.

I explained to someone recently that having a daughter is like having a mini you and a built in little best friend. Having a son, though, feels like watching your heart walk outside of you. He may be wild but he is still the sweetest thing, always ready with a hug and unprompted “I love you Mommy!” He loves night time stories and morning snuggles, and remains my homebody. Please don’t ever change, Bren!

So today we will celebrate him— Young, Wild & Three!

Meatball Subs!!!
This is a family hit, and so easy to make. I love that it doesn’t involve me slaving over the stove nor the oven being on long, making it perfect for summer. We pair them with a side salad.

Recipe
1 package frozen Italian meatballs
2 bell peppers, sliced
1 red onion, sliced
1 jar spaghetti sauce
8 French or hoagie rolls
8 slices Provolone cheese

Add frozen meatballs, bell pepper and onion to the crockpot and cook on high 6 hrs. Once done, open rolls atop a baking sheet and place under broiler for a slight crunch (this will make sure the bread doesn’t soak up the juices such that you can hold the subs). Add meatballs and veggies, top with cheese and place back under the broiler to melt the cheese.

Finally added my umbrellas to my Baja shelf/pool deck/tanning ledge beside my loungers. I also found the neatest cup/tray holders for those poolside snacks and drinks, making lounging in the pool cooler and even more fun!
