Chicken Ramen Y'all were excited for this one...and let me say this was decent for the ease of it. I hope you give it a try! Comment LINK for Dutch oven and cookware. Recipe serves 4-6. 1.5 lbs Chicken breast (I used tenderloins) 2T butter 4tsp sesame oil 4tsp ginger, minced 1.5tsp garlic, minced 6T low sodium soy sauce 4T mirim (or sub for 4T rice vinegar and 2tsp sugar) 64 oz chicken bone broth 2tsp salt 6 large eggs 4 packs chicken ramen (only using 1 packet seasoning) 1 cup sliced scallions 2 jalapeños sliced (optional) Preheat oven to 375°F. Heat oven safe pan (I.e. Dutch oven) over medium and add butter and chicken, season top of chicken with 1 packet seasoning from ramen. Cook chicken tenderloins about 3-5 minutes on either side and transfer to oven to roast for 15 min. Meanwhile boil about 8 cups water. Add eggs for 8 min and transfer to an ice bath, reserving water. When chicken is done, remove from Dutch oven and reserve the drippings. Start your broth combining sesame oil, ginger and garlic, and heat for 1 minute. Add mirim, soy sauce and salt, and heat for 2-3 minutes. Add broth and cover, bringing to a boil. Add ramen (no seasoning) to your reserved water cook about 5-8 minutes or until noodles are tender. Slice chicken and peel/slice eggs. Assemble ramen, chicken, broth, eggs, scallions and jalapeños (if desired).
