Today’s Cooking Episode: Easy Back-to-School Tuscan Soup 👩🍳🍲✨ Ingredients: • 1 lb ground Italian sausage (no casing) • 1 yellow onion, chopped • 7 ½ cups chicken broth • 1 ½ lbs russet potatoes, thinly sliced (no need to peel) • 2 slices of bacon (I skipped it) • A pinch of chili flakes (optional for heat) • 1 tsp garlic powder • 1 ½ tsp salt (add more to taste) • 1 tsp black pepper • 2 cups half and half (or heavy cream for a richer soup) • 2 cups kale, chopped • Shredded parmesan cheese (for topping) Instructions: 1. In a large pot over medium-high heat, cook the sausage, breaking it into pieces. 2. Once cooked, transfer the sausage to a bowl. Leave about 1–2 teaspoons of the grease in the pot. 3. Add chopped onion and cook for about 5 minutes until soft. 4. Add the chicken broth, sliced potatoes, garlic powder, salt, and pepper. 5. Bring to a boil, then lower the heat to medium. Stir in the half and half (or cream), kale, and cooked sausage. 6. Cover and let it simmer for 10–15 minutes, until the potatoes are tender. 7. Taste and adjust salt or pepper if needed. 8.
