Today’s cooking episode: Brownie Carrot Cake with Brigadeiro Topping 🍫🥕 In Brazil, this is one of our favorite cakes — my family always has carrot cake on the table. It tastes like home to me. Ingredients Brownie Layer: ⅔ cup melted butter, 1 ¼ cups sugar, 3 tbsp cocoa powder, 2 eggs, 1 cup all-purpose flour, 1 tsp baking soda. Carrot Cake Layer: 3 grated carrots, 3 eggs, 3 cups all-purpose flour (sifted), 1/2 cup canola or coconut oil, 2 cups sugar, 1 tbsp baking powder, 1 pinch of salt. Brigadeiro Topping: 1 can sweetened condensed milk, 1/2 carton heavy cream, 4 tbsp cocoa powder. Instructions 1. Brownie Layer: Preheat oven to 350°F (180°C). Mix melted butter, sugar, cocoa powder, and eggs until creamy. Add flour and baking soda. Transfer to a greased 9” bundt pan and bake for 25 minutes. Set aside. 2. Carrot Cake Layer: Mix eggs, sugar, oil, and grated carrots. Add sifted flour gradually, mixing gently. Add baking powder and salt. Pour the carrot batter over the brownie layer and bake for 40 minutes or until golden. 3. Brigadeiro Topping: In a saucepan over low heat, cook condensed milk, heavy cream, and cocoa until thickened and pulling away from the pan. Pour over the cooled cake.
