MAC & CHEESE INGREDIENTS 1 16oz box of Rotini pasta (reserve 1/2 cup pasta water) 2 tbsp butter 1 cup heavy cream 1 1/4 cup Gouda cheese, shredded 1 1/4 cup white cheddar cheese, shredded Salt, paprika, cracked pepper - to taste DIRECTIONS 1. Cook pasta according to package instructions. 2. After draining pasta, add butter, heavy cream, Gouda, cheddar, salt, paprika and cracked pepper. 3. Gently stir until cheese is fully melted. Add a little pasta water if needed and stir again.

Got a little bonus meal from my SLOW-COOKER BBQ BEEF TIPS (5 posts back). 👏🏼 You know I love an egg and rice combo so I made this BEEF TIP FRIED RICE. 🍳🍚

TO MAKE: Add butter (or oil of choice) to a large skillet on medium to high heat. Add beef tips, cold rice (I always have rice meal prepped), cracked pepper and salt, heat until warm. Make a space in the center of the pan and add eggs. Gently mix until fully combined and eggs are cooked to your liking. Add to a bowl and top with sliced green onions, shaved white cheddar cheese, cracked pepper and tajin.

PART 3 of 3: One Recipe, Multiple Meals Series

Used up the SLOW-COOKER BBQ BEEF TIPS (4 posts back) and made SHREDDED BEEF QUESADILLAS aka a meal everyone always loves around here. Quick, easy and filling.

TO MAKE: Reheat beef tips then shred using two forks. Heat butter or oil of choice in a large pan on medium to high heat. Place a flour tortilla in the pan. Add a layer of shredded cheese, beef and another layer of cheese onto one side of the tortilla. Fold the empty side over and gently press. Cook until lightly browned on both sides. Top quesadillas with diced white onions and green onions. Serve with sour cream, shredded lettuce, diced tomatoes and fresh lime wedges.

PART 1 of 3: One Recipe, Multiple Meals Series
Love sharing these series with you to make your life easier. Make one big batch of a protein and turn it into multiple meals. 👏🏼

SLOW-COOKER BBQ BEEF TIPS

2 tbsps butter
3 tbsps garlic, minced
1 large purple onion, minced
2 tbsps tomato paste
5 dashes of Worcestershire sauce
1.5 cup bbq sauce (plus extra for drizzle)
Salt, cracked black pepper, garlic powder, smoked paprika - generously season
4-4.5 pounds cubed beef tips
1/4 cup honey
Fresh parsley, chopped

1. Turn crockpot onto low.
2. Add butter, garlic, onion, tomato paste, Worcestershire sauce, bbq sauce and seasoning to the crockpot, mix.
3. Add beef tips and honey, mix well.
4. Cover and cook for 4-5 hours or until tender.
5. Remove lid to stir.
6. Top with a drizzle of bbq sauce, fresh parsley and cracked black pepper before serving.

🌶️SPICY TUSCAN ORECCHIETTE PASTA🌶️ This dish is ready in 25 minutes and has lots of flavor!

INGREDIENTS
16 oz box of @dececco_pasta orecchiette pasta
Olive oil
6-8 garlic cloves, chopped
1 medium onion, diced
5 Italian sausages (meat removed from casing)
Salt, cracked pepper, garlic salt, red pepper - to taste
3 cups kale, chopped
1 cup sun-dried tomatoes, sliced
@belgioiosocheese parmesan cheese (measure with your ❤️)
1 jalapeño, diced (optional)

DIRECTIONS
1. Cook pasta according to package instructions. Toss with olive oil when done.
2. Drizzle olive oil in a large pan on medium heat.
3. Add garlic, onions, sausage and seasoning. Cook until meat is browned, making sure to chop well.
4. Mix in kale, sun-dried tomatoes and Parmesan cheese. Cook for about 2 more minutes.
5. Combine sausage mixture and pasta. Drizzle with more olive oil, salt and pepper, gently mix.
6. Top with Parmesan cheese and jalapeños.

MANGO TERIYAKI TURKEY RICE BOWL. Anytime I ask my kids what they want to eat 8 out of 10 times they will say ground turkey and rice, which makes me happy because it’s something I can also eat everyday (plus it’s quick + easy to make). Great thing is the meat can be flavored and seasoned SO. MANY. WAYS. 👏🏼

TO MAKE: Add olive oil to a large pan on medium to high heat. Add ground turkey, chop well and cook until lightly browned. Drain if necessary. Add teriyaki sauce, minced garlic, salt and cracked pepper. Gently mix. Cook until sauce is caramelized. Serve with jasmine rice. Top with mango chunks, sliced green onions, cilantro, crushed peanuts, sesame seeds and red pepper flakes (optional).

🍃BASIL RANCH PASTA SALAD🍃 is what you need for your next bbq! It screams spring and summer, plus it gives me a chance to use all the fresh basil from the garden

INGREDIENTS
1 pound @publix radiatori pasta
1 can @goyafoods (15.5 oz) chick peas, drained
1.5 cups cherry tomatoes, halved
4 mini cucumbers, halved
3 tbsps purple onions, diced
3 @mezzetta pepperoncinis, sliced
3 hard boiled eggs, chopped
1.5 cup chicken, diced
1/2 cup @dukes_mayonnaise
1/4 cup @primalkitchenfoods ranch dressing
6 basil leaves, sliced (4 to mix, 2 for garnish)
Salt, cracked pepper - to taste

DIRECTIONS
1. Cook pasta according to package instructions. Once done, drain and rinse under cold water.
2. Add pasta and remaining ingredients into a large bowl. Gently mix.
3. Top with basil and cracked pepper before serving.

STEAK FAJITA RICE BOWL

TO MAKE: Add thinly sliced bite-sized pieces of sirloin steak to a large bowl. Mix well with soy sauce, salt, cracked pepper, onion salt and garlic powder. Heat olive oil in a large pan on medium to high heat. Add steak and sear for 1-2 minutes. Add fresh garlic, sliced red bell peppers and sliced onions. Mix and cook until peppers and onions are soft. Serve over jasmine rice topped with diced mango, green onions, sesame seeds and red pepper flakes (optional).

OVEN BAKED BABY BACK RIBS 🍖 Made ribs for the first time over the weekend and whoa they were good! Whole fam liked them plus they are priced just right. $18.71 for two racks at @samsclub!

TO MAKE: Preheat oven to 275F. Remove ribs from packaging, rinse and pat dry with a paper towel. Remove any silver skin (usually on the bottom near the bones). Add racks meat side down to a large baking pan. In a bowl combine brown sugar, salt, cracked black pepper, smoked paprika, onion powder and garlic powder. Season the bottom part of the ribs, flip and season the top, making sure to evenly coat. Tightly cover the pan with tin foil and bake for 2.5 hours. Remove from oven. Increase the oven temperature to 400F. In a bowl combine your favorite bbq sauce, salt, garlic powder and cracked black pepper. Remove the foil and pour half of the sauce over the ribs and evenly spread. Add the ribs back into the oven for 15 minutes then remove, drain liquid, cover in remaining sauce and place back in the oven for 15-20 minutes.
