Roasted carrots. Your easy Easter side dish. My ingredients included two pounds of rainbow carrots from Whole Foods, 1 tablespoon of olive oil, 1 tablespoon of maple syrup or honey, 1/2 teaspoon of salt, 1/2 teaspoon of freshly grounded black pepper and fresh parsley to garnish. After chopping all the carrots into 2 inch barrels, I mix the carrots with all the ingredients in a bowl coating well. Then, I line each carrot in a baking dish. You can also use a baking pan with parchment paper. That was my original plan but I was out of parchment paper. Roast your carrots on 425 degrees for 25 minutes.
