I remember vividly riding in her van down windy country roads to make a trip to her local @Target and stocking up on @BettyCrocker supplies to prep for a summer full of creating magical treats and memories! She had such a knack for elevating the simplest of recipes just like this one! If you’re looking for a quick, simple, and delicious spring recipe, try this one taste tested and approved by my Grandma Betty herself! #TargetPartner #BettyCrocker #Target

INGREDIENTS:

- Betty Crocker Sugar Cookie Mix
- Betty Crocker Rich & Creamy
- Vanilla Frosting
- 1 Stick of Softened Butter
- 1 Egg
- Strawberries
- Blueberries
- Mint for garnish

DIRECTIONS:

Preheat oven to 350 degrees. Mix egg, softened butter and Betty Crocker Sugar Cookie Mix until dough ball forms. Scoop one inch dough balls and place on baking sheet 2 inches apart. Bake for 10-15 minutes until the edges are lightly golden brown. Let cool and slice strawberries thinly. Frost cooled cookies with Betty Crocker Vanilla Frosting. Top with Strawberries, Blueberries and a optional sprig of mint to garnish!

Springtime makes my heart flutter 🦋 Tried some new Easter Sugar Cookie designs this weekend with my favorite pastel colors. See icing + sugar cookie recipe below! The Butterfly was inspired by @southstreetcookies who is an incredible cookie baker (and also from Iowa 💗)

ICING / FROSTING RECIPE:

Beat:
3 TBSP Meringue Powder
1/3 cup to 1/2 cup Warm Water (Until frothy)

Add:
4 Cups Powdered Sugar (Slowly until glossy)

Add:
Vanilla to taste and more water if the icing is too stiff.
This dries pretty fast (within 5-10 minutes)

MY GRANDMA BETTY’S SUGAR COOKIE RECIPE:

1 Cup Soft Butter
11/2 Cups Sugar
2 Eggs
1 Cup Sour Cream
11/2 TSP Vanilla
41/2 Cups Flour
1 TSP Salt
1 TSP Baking Soda
1/2 TSP Nutmeg

Cream butter and sugar till fluffy, add eggs and beat well. Add sour cream and vanilla, blend well. Add dry ingredients. The dough will get quite soft. Chill for several hours or over night. Roll to 1/4 inch thickness, cut, (sprinkle with sugar if you don’t plan to frost), and bake at 375 for 8-12 minutes just until some edges get barely golden. Undercooked is better than overcooked!
