Last year I bought out all of Hobby Lobby's assortment of disco balls when they were 50% off and it was the best decision ever. I love scattering them around the house in places that get lots of sunlight for an unexpected mid-afternoon light show.

Our latest obsession: Apple walnut arugula salad with goat cheese and a delicious homemade balsamic dressing.

The sweet-and-tangy flavor of this salad makes it perfect as a side for leisurely picnics, al fresco gatherings, or simply savoring the beauty of the spring season.

Ingredients:
5 oz. baby arugula
2 crisp apples (cut and thinly sliced)
1|4 cup walnuts (roughly chopped and toasted if desired)
2 oz. goat cheese (crumbled or creamy)

For the balsamic dressing:
6 tbsp. olive or avocado oil
2 tbsp. aged balsamic vinegar
1 tbsp. organic maple syrup
2 tbsp. Dijon mustard
1|4 tsp. salt

Instructions:
1. Place the arugula on a plate.

2. Thinly slice the apples. Add to arugula.

3. Top with walnuts and goat cheese.

4. Whisk together the balsamic dressing ingredients until fully combined. If you like a sweeter dressing, you can add more maple syrup.

5. Drizzle with dressing and top with a sprinkle of salt.

In our fast-paced world it often seems like we rush our children to grow up before their time. From the clothes they wear (with miniature versions of adult fashion trends) to how we decorate their rooms in styles that mimic mature aesthetics — we inadvertently send the message that they should embrace adulthood prematurely. What's more — the expectations we set for them academically and socially often exceed what is developmentally appropriate. In our well-intentioned pursuit of preparing them for the future we sometimes forget to let them be little.

Childhood is a unique phase in life where the imagination is boundless and the joy of discovery is at its peak. It's so important to strike a balance between nurturing their independence and allowing them the freedom to savor the innocence and wonder of childhood. It all passes too quickly! 🤍

One way we preserve the magic of childhood and let kids be little is to opt for a whimsical house bed instead of a standard queen-size bed. This playful and imaginative bed design can transport children to the world of their dreams, making bedtime an adventure rather than a mundane task. To further nurture their creativity, we covered their walls with sweet decals of silly animals, hot air balloons, and other enchanting scenes. These decorations create a joyful and imaginative environment, allowing kids to immerse themselves in a world of fantasy and play. It's these little details that can make a significant difference in preserving the innocence and joy of childhood, reminding us to let them revel in the magic of being little for as long as possible.
