First crockpot dinner in the new house in my new crockpot and omg it was amazing 🤩

Linking my new crockpot and kitchen things!

Creamy garlic parmesan chicken gnocchi soup and it could not be easier!

Here’s the recipe!

1½–2 lbs chicken breasts
1 small yellow onion, diced
5–6 garlic cloves, minced
3½ cups low-sodium chicken broth
2 tbsp butter
1 tsp Italian seasoning
1 tsp garlic powder
½ tsp onion powder
½ tsp dried thyme
½ tsp black pepper
½ tsp salt
16 oz potato gnocchi
1 cup heavy cream
1 cup freshly grated Parmesan + more for serving
2–3 cups baby spinach
small squeeze of fresh lemon

Add chicken, onion, garlic, broth, butter + seasonings to the crockpot. Cook on LOW for 4–5 hours, or until chicken reaches 165°F and shreds easily.

Shred the chicken, turn the crockpot to HIGH and add the gnocchi. Cook 20–30 minutes, until tender.

Turn to LOW and stir in heavy cream, Parmesan + spinach. Cook another 10 minutes.

For a thicker soup, mix 1 tbsp cornstarch + 1 tbsp cold water and stir it in during the last 5–10 minutes.

Finish with a small squeeze of lemon, extra parm + cracked pepper

Save this one for an easy cozy dinner ❤️

Our backpack + shoe station, all from @Target the cube shelf, storage baskets, and all the decor. Built this last year and we've used it every single day since, hands down one of the best organization projects we've done for our entryway.
