INGREDIENTS 5 Dried Fish Maws 5 Red Dates Handful Goji Berries 1 Whole Chicken - cut into 4 pieces 1 Ginger 1 Kombuca Squash 3 Carrots Add salt as needed 🐠 Fish Maw Preparation Using a neutral oil, fry the fish maws until they puff up completely. Then soak them in water overnight in the fridge so they will soften. Make sure to put a plate over the fish maw when you soak them so the fish maw does not float. Chop them up into 2-3 inch chunks. 🥕Golden Mixture Preparation Steam the chopped squash and carrots till they’re soft. Place in blender, add some water and let blend till it liquifies. 🐓 Soup Preparation Blanch the chicken pieces in hot boiling water for 15 minutes and rinse them in the sink to remove any impurities. In a new pot of water, drop the chicken pieces, sliced ginger and red dates and let it boil and simmer for 2-3 hours. Make sure to break down the chicken parts and smash the dates in the pot after an hour, so the chicken meat flavor gets immersed in the soup. After boiling the chicken soup for at least 3 hours, drop the fish maw, goji berries and golden mixture (a blend of squash and carrots) and boil for at least 30 minutes. Add salt as necessary.
