EASY SEAFOOD PAELLA RECIPE 🦐 Feeds at least 8 people Ingredients 1/2 chopped onion 1 chopped red bell pepper 5 minced garlic cloves 1 bay leaf 12 peeled & deveined shrimp 6-8 clams Pinch of saffron 1 tsp tumeric 1/4 lb squid 1/4 cup frozen peas 4 cups bomba rice (or use Uncle Ben’s rice) 8 cups chicken stock Add oil to the pan, and sautee onions, garlic, bell peppers till it softens. Add saffron, bay leaf and pepper and sautee for a minute. Add rice and pan fry for a few minutes. Add chicken stock and tumeric. Let the mixture boil at medium heat till water evaporates halfway. Add the shrimp, clams, squid and peas - and let them boil for a few minutes uncovered. Then turn off stove, cover the pan for 1 hour to let the seafood cook through and rice fully absorb the reminder of the liquid. For the rice, paella is traditionally cooked with Bomba rice, but if you can’t find this type of rice, I have used Uncle Ben’s rice which is just as good.
