Ingredients -1 cup cooked quinoa -2 cups chopped romaine salad -1/4 cup tomatoes / black beans / red onion / avocado / corn -Sprinkle of cotija cheese -1/4 grilled chicken breast (optional) Chipotle Dressing -3 tbs chipotle powder -1 tbs chili powder -2 tbs paprika -2 tbs yogurt -1/2 tbs dijon mustard -1/2 lemon (squeezed juice) -1/4 cup olive oil -1 tbs or more honey -2-3 tbs water or more if needed Roast your quinoa at 350F in the oven for at least 30 mins (or more if needed) till it turns brown and crispy. To make the dressing, combine chipotle powder, chili powder, paprika, yogurt, dijon mustard, lemon juice, olive oil, honey and water in the blender. Layer the salad, starting with the lettuce on bottom, then add the toppings (including quinoa), dressing and cotija cheese.
