🍓 No-Bake Raspberry Cottage Cheese Treats (No Cream, No Freezing Required)*

✨ Ingredients (for 6 pieces)

Filling:
• 12.7 oz (360 g) cottage cheese (5%)
• 8.5 oz (240 g) soft cottage cheese or farmer’s cheese
• 3.5 oz (100 g) cream cheese
• 3 tbsp (40 g) melted butter
• 3 tbsp (40 g) melted white chocolate (optional)
• Raspberry jam or raspberry purée (for the center)

Coating (glaze):
• 10.5 oz (300 g) white chocolate
• 3–4 tbsp vegetable oil (neutral, like avocado or light olive oil)
• Pink food coloring or beet powder (for color)

👩‍🍳 Instructions

1. Make the base
• Blend together: cottage cheese, soft cheese, cream cheese, melted butter, and white chocolate until smooth.
• Spread half the mixture into a mold.
• Make a small indentation and add raspberry jam.
• Cover with the remaining mixture.
• Tap the mold lightly to even it out.
• Freeze for 2–3 hours until firm.

2. Make the glaze
• Melt the white chocolate (microwave in short bursts or double boiler).
• Add oil and food coloring.
• Mix until smooth and slightly fluid.

3. Coat
• Insert a skewer or knife into each piece.
• Dip into the melted chocolate.
• The coating sets almost instantly.
• Let them sit in the fridge briefly so the inside softens slightly.

❗ Tip for that perfect crunch

For a thin, crispy shell:
• Keep the glaze very fluid (not thick!)
• Add a bit of cocoa butter or extra oil for that snappy coating

This project took exactly one month and two weeks—and yes, it happened while I was 37 weeks pregnant. You know that nesting itch when everything suddenly feels urgent before the baby arrives? That was me.

With three kids and a four-bedroom house, we were one room short, so I had to get creative. Our master shower was generously sized, and the toilet room was separate and connected to a small closet. We decided to rethink the layout and divide the space into two smaller rooms: one refreshed master bathroom, and the other—a small but fully functional nursery.

Proof that a little creativity (and a lot of nesting energy) can completely change how a home works. ✨
