Here’s the recipe: •7-8 eggs •salt & pepper to liking •1/2 onion •1/2 pepper * Add a splash of coconut milk or almond milk for additional fluffiness Directions: • Dice and sauté your onions and peppers • Use a cupcake pan that you have lightly greased with extra-virgin olive oil and add sautéed peppers and onions to each cup • in a separate bowl add all your eggs and seasonings plus milk and stir well • pour the egg mixture into each cupcake pan (a little over halfway full). • Bake at 400° for 20 to 25 minutes And if you have a minute, let me know if you would try this recipe.
