Cream the Base: In a large bowl, use an electric mixer to beat the butter and ½ cup of sugar together. Keep going for about 2 minutes until the mixture looks light and fluffy. 2. Add Flavor & Binder: Mix in the egg yolks, almond extract, and salt. Give the sides of the bowl a quick scrape to make sure everything is incorporated. 3. Add Flour: Pour in the flour and mix just until the dough comes together—try not to overmix! 4. Roll & Coat: Scoop out about a tablespoon of dough at a time and roll it into a smooth ball between your palms. Roll the ball in your extra bowl of sugar until coated, then place it on a parchment-lined baking sheet. Space them about 1 ½ inches apart. 5. Make the Hearts: Use your thumb (or the back of a round measuring spoon) to press two small, angled indentations into the center of each ball to form a heart shape. Spoon about ½ teaspoon of jam into the center of each heart. 6. Chill Out: Preheat your oven to 350°F. While it heats up, pop your cookie sheet into the fridge for 10–15 minutes. This is the secret step to keep them from spreading out too much! 7. Bake & Cool: Bake for 10 to 12 minutes until the edges feel set.
