officially that time of year where all I want is food from the grill & fresh summer flavors — this one is a favorite! recipe below 👇🏻 

Ingredients: 
1 lb boneless skinless chicken thighs 
1/4 cup olive oil
2 garlic cloves, minced
2 tbsp coconut aminos 
2 tsp grated ginger 
2 tbsp honey 
1 tsp smoked paprika 
1 tsp dried oregano
1 tsp cumin
salt, to taste 
pepper, to taste 
White rice, for serving 
Guacamole, for serving 

pineapple mango salsa:
2 cups fresh diced pineapple 
1.5 cups fresh diced mango
1 red bell pepper, diced 
1/2 red onion, diced 
1/3 cup fresh cilantro, diced
juice of 1 lime
1 tsp cumin
salt, to taste 

Instructions:
1. Prepare the chicken. In a large bowl, combine 1/4 cup olive oil, 2 minced garlic cloves, 2 tbsp coconut aminos, 2 tsp grated ginger, 2 tbsp honey, 1 tsp smoked paprika, 1 tsp oregano, and 1 tsp cumin. Whisk well to combine. 
2. Season the chicken thighs with salt and pepper and place in a baking dish, bowl, or plastic bag. Cover with the marinade and set aside for a minimum of 30 minutes. 
3. While the chicken marinates, prepare the pineapple salsa. In a large bowl, combine diced pineapple, mango, bell pepper, onion, cilantro, and lime juice. Season with salt and cumin. Mix well to combine. 
4. Prepare the chicken. Grill, cook over the stove or bake in the oven. I prefer grilling for this recipe. To grill, light the grill. Sear and cook the chicken on each side for 4-8 minutes or until the internal temperatue has reached 165 degrees. 
5. Once the chicken is cooked, slice and serve over rice with pineapple salsa, guacamole, and fresh cilnatro. 
6. Serve immediately and enjoy!

a childhood favorite recipe of mine but cutting the prep time in half but it still has the same great flavor 🤌🏻 recipe below! 

Ingredients:
2 lbs ground beef
2 cups long grain white rice
5-6 roma tomatoes, diced
1 bunch of parsley, finely chopped
1/3 cup fresh dill, finely chopped
1 white onion, diced
3 tbsp olive oil
salt, to taste 
fresh cracked pepper, to taste 
2 cups water

instructions:
1. Preheat the oven to 400 degrees. 
2. In a cast-iron skillet over medium-hight heat, brown the ground beef, seaon with salt and pepper, and drain any excess grease. 
3. Once the ground beef is finished cooking, add about 2 tbsp olive oil, rice, and diced white onion. Saute for about 2-3 minutes. 
4. Add in your diced tomatoes, fresh dill and parsley, stir to combine and taste to season with more salt and pepper to your liking. Note: add more olive oil as you cook if needed. Saute for another 1-2 minutes.
5. Once the flavor is to your liking, turn the heat off and pour in two cups of water. Stir to combine. 
6. You can bake this uncovered or covered with foil. I personally like the top to get a little crispy so I bake uncovered. Place the skillet in the oven to bake for 30 minutes. 
7. Once cooked and the rice is fluffy, remove from the oven and stir. Top with fresh herbs and serve warm to enjoy!
