holiday party season is here 🥂 my mom has been making this easy dip for as long as I can remember — it’s always a crowd pleaser and a great one to prep ahead of time! sharing the recipe below!

2 cups Swiss cheese
1 cup mayo
1 cream cheese
1/4 cup green onion
Ritz crackers, crushed
1/2 cup-1 cup cooked crushed bacon bits

1. Preheat oven to 350 degrees if cooking immediately.
2. In a large bowl, mix together 2 cups shredded Swiss, 1 cup mayo, 8 oz cream cheese, and 1/4 cup green onion.
3. Add the mixture to a baking dish (If prepping this ahead of time, cover and set in the fridge until ready to bake).
4. Once you’re ready to bake, top with crushed ritz crackers and bacon.
5. Place in the oven to bake until bubbly. About 12-15 minutes.
6. Serve warm with ritz crackers to enjoy!

crockpot tortellini soup is always a favorite in our house & an easy one that saves me on busy week nights! the recipe is below! follow along for more easy recipes 🫶🏻

1 lb. ground chicken sausage or ground pork sausage
1 pack cheese tortellinis
6 cups chicken broth or chicken bone broth
3/4 cup heavy cream, coconut milk, or original nut pod oat creamer
14.5 oz. can diced tomatoes
4 garlic cloves, minced
1 small white onion, diced
2 tbsp olive oil
red pepper flakes, to taste (optional)
1 cup baby spinach, chopped
1 tsp oregano
1 tsp garlic powder
salt, to taste
pepper, to taste
Parmesan cheese, for serving (optional)

Instructions:
1. In a pan over medium heat, drizzle olive oil and add ground sausage. Break apart into small pieces and cook until brown and no longer pink. Once cooked, drain any excess grease.
2. Add the cooked sausage to a crockpot along with diced onion, garlic, and tomatoes.
3. Season with salt, pepper, oregano, garlic powder, and red pepper flakes.
4. Pour in 6 cups of chicken broth and stir to combine.
5. Cover to cook on low for 8 hours or high for 4 hours.
6. Once cooked, pour in heavy cream, uncooked tortellini, and a handful of chopped spinach. Stir to combine and cover to cook on warm for 5 minutes.
7. Serve and garnish with Parmesan cheese.

holiday party season is the best season 🥂 this marinated tomato wreath is one of my favorite festive appetizers!

follow along for more easy cocktail & apps for the holiday season!

ingredients:
Burrata cheese, I used Trader Joe’s seasonal truffle burrata
2 lbs cherry tomatoes, sliced
2 shallots, diced
4 garlic cloves, minced
1/3 cup fresh parsley, finely chopped
2 tbsp fresh rosemary, finely chopped
1/3 cup olive oil
1 lemon, juiced
2 tbsp red wine vinegar
3 tbsp balsamic vinegar
Salt, to taste
Pepper, to taste
Crostinis, for serving

ingredients:
1. In a large bowl, combine sliced cherry tomatoes, shallots, garlic, parsley, rosemary, olive oil, lemon juice, red wine vinegar, balsamic vinegar, salt, and pepper. Toss well and set aside for a minimum of 10 minutes to marinate.
2. Once you’re ready to serve, lay out a large platter and add the marinated tomatoes to the platter using a slotted spoon in the shape of a wreath. Garnish with fresh rosemary in the center for a festive touch.
3. Add the fresh burrata in the center and drizzle with olive oil and sprinkle with a little salt.
4. Serve with crostinis and enjoy!

Creamy Chicken Tortilla Soup

Ingredients:
* 1 rotisserie chicken, skin removed and shredded
* 6–8 cups chicken bone broth
* 1 (14.5 oz) can diced roasted tomatoes with chilies
* 1 sweet onion, diced
* 4 garlic cloves, minced
* 2 (15 oz) cans black beans, drained and rinsed
* 2 cups frozen corn
* 8 oz cream cheese, softened
* 1 packet Siete taco seasoning
* 1 tbsp olive oil
* Salt, to taste
* Pepper, to taste
* Juice of 2 limes
* Fresh cilantro, for serving
* Crushed tortilla chips, for serving

Instructions:
1. In a large pot over medium heat, heat the olive oil. Add the diced onion and garlic, then season lightly with salt and pepper. Sauté for 2–3 minutes until fragrant and softened.
2. Stir in the diced tomatoes and taco seasoning, cooking for 1–2 minutes.
3. Pour in the chicken bone broth. (Optional: Use an immersion blender to blend for a smoother soup base.)
4. Add the shredded chicken, black beans, corn, softened cream cheese, and lime juice. Stir to combine.
5. Bring to a gentle simmer, stirring occasionally until the cream cheese is fully melted (about 10–15 minutes).
6. Taste and adjust seasoning with additional salt, pepper, or lime juice as needed.
7. Serve hot, topped with fresh cilantro and crushed tortilla chips.
