crockpot tortellini soup is always a favorite in our house & an easy one that saves me on busy week nights! the recipe is below! follow along for more easy recipes 🫶🏻 1 lb. ground chicken sausage or ground pork sausage 1 pack cheese tortellinis 6 cups chicken broth or chicken bone broth 3/4 cup heavy cream, coconut milk, or original nut pod oat creamer 14.5 oz. can diced tomatoes 4 garlic cloves, minced 1 small white onion, diced 2 tbsp olive oil red pepper flakes, to taste (optional) 1 cup baby spinach, chopped 1 tsp oregano 1 tsp garlic powder salt, to taste pepper, to taste Parmesan cheese, for serving (optional) Instructions: 1. In a pan over medium heat, drizzle olive oil and add ground sausage. Break apart into small pieces and cook until brown and no longer pink. Once cooked, drain any excess grease. 2. Add the cooked sausage to a crockpot along with diced onion, garlic, and tomatoes. 3. Season with salt, pepper, oregano, garlic powder, and red pepper flakes. 4. Pour in 6 cups of chicken broth and stir to combine. 5. Cover to cook on low for 8 hours or high for 4 hours. 6. Once cooked, pour in heavy cream, uncooked tortellini, and a handful of chopped spinach. Stir to combine and cover to cook on warm for 5 minutes. 7. Serve and garnish with Parmesan cheese.
