1 small white onion chopped
1 tsp of fresh ginger garlic paste
3 tbsp of neutral oil
Salt to taste
1 tsp of cumin
1 stick of cinnamon
1 black cardamom
2 green cardamom
5-8 whole black peppercorns
2 cups of washed and drained rice
3/4th cups of frozen or fresh peas
1 green chili
Small pinch of sugar

Set the instant pot to sauce mode, pour in the oil and let it heat up. Fry the onion for 2-3 mins, add the ginger garlic paste and all the whole masalas. Fry for 1 minute till you can smell the masalas, add in the peas and the salt. Turn saute mode off.
Pour the washed and drained rice into the pot
1 cup of rice needs 1 & 1/4th cup of water
2 cups of rice needs 2 & 1/2 cups of water
Add the water which is 2.5 cups.
Check the salt
The salt in the water must be a little high.
Mix and right before you put the lid on the pot, sprinkle one pinch of sugar. Place the lid. And if you IP needs to be manually set to sealing do that. Set the IP to High pressure for 5 minutes and release pressure 5 minutes after the cooking is done.
You will have the most perfect rice.
This recipe can be doubled.

Cheat Khausway
🌿4 cloves of garlic
🌿1 onion
Blend together with some water
🌿4 tbsp of any beautiful oil
🌿2 lbs of chicken breast chopped small
🌿Spices: 1 tsp of salt, 1.5 tsp of chicken powder or vegeta, 1 tsp or more of turmeric, 1 tbsp of coriander powder, 1 tsp of cumin powder, 1 tsp of paprika or chili powder
🌿1 can coconut cream
🌿1 can coconut milk
🌿 pinch of sugar
🌿Cornflour slurry optional I use 1.5 tbsp in little bit of water
🌿2 tbsp of oil
🌿1 tsp of Kashmiri lal mirch
🌿1 box of spaghetti
🌿Condiments of choice: I used onion, cilantro, tomatoes, lemon and eggs. Chop everything
Any form of crispies
🌟🌟🌟🌟🌟Chili oil recipe courtesy @ramfacooks you can google this recipe or search her page for it. It’s unbelievable

Boil the spaghetti as directed on the package. Reserve half a cup of pasta water. Do not oil the spaghetti once it’s done. Place it in a bowl and put a lid over it so it doesn’t dry out and clump.
In a heavy large bottom pot at the oil and add the blended onion and garlic. Once the onion and garlic is a little golden go ahead and add in your chicken as well as the spices and cook for about 5 minutes, once the oil starts to separate, add in the coconut milk and the coconut cream and 1:2 a cup of pasta water. Go in with a pinch of sugar mix placed the lid on top of the pot and cook on low for 15 to 20 minutes.

Chop up all your condiments.
Boil eggs if using
Make the chili oil
I highly recommend making the chili oil as the flavor of it in the khausway is amazing
Once 15 minutes of cook time is over, check the soup and see if it needs any more seasonings. You may also choose to thicken it with corn flour.
Turn the heat off
Place the remaining oil in a small pot, heat it up, put the Kashmir lal mirch in and wait till it’s nutty and fragrant. Go ahead and pour over the khausway soup.
Customize your bowl as you like it!
