Crockpot Lasagna Soup

Ingredients:
1 pound ground turkey (lower in fat)
3 mild Italian sausage links
1 can (petite) diced tomatoes
2 jars marinara sauce (5 cups total)
1 container beef bone broth
1 cup low-fat plain Greek yogurt
10 lasagna sheets (broken into pieces)
Seasonings: salt, pepper, Italian seasoning, garlic powder, onion powder (measure with your heart)

Instructions:
1. Break up and brown the meat
2. Add meat, tomatoes, sauce, bone broth, and seasonings to a crockpot
3. Cook on high for 6 hours
4. Add in Greek yogurt and sheets. Stir
5. Cook on high for 30 minutes (until noodles are cooked)
6. Serve. (Top with cottage cheese if you want more protein)

Makes 8 servings: 457 cal, 14F, 48C, 32P (without cottage cheese)

Day 3 was actually two days ago, but I was so exhausted that I forgot to post a video… better late than never.

Day 3 (and day 4) it was a challenging day because I felt so tired and drained of energy the entire day. I was still able to get through all of my mandatory tasks, but it was definitely a struggle.

I’ve also realized that while I’m knocking out the requirements for the challenge, I want to apply what I’m learning to other areas of my life so I think I might start journaling to learn where I can improve in life in general.

Overall, I’m just very happy that I got through another day and I’m staying strong and getting it done no matter how I feel

75Hard: Day 2 of 75 — 8.5.25

Day 2 was a little bit of a struggle because I was so exhausted when I woke up the first time. Going back to sleep and waking up about two hours later definitely helped me feel less tired, but it did kind of mess up my routine. Instead of doing my reading in the morning, I did it at night and I switched my workout schedule. Overall day two was a good day but by the end of the day, I was exhausted again. Let’s go for day three.

Recently, I have been desperate for more structure and discipline in my life and I thought let’s complete 75Hard. I love Andy Frisella and everything he talks about gaining from the challenge is what I want in my life so I started yesterday August 4.

The hardest part was seeking to the diet and finishing the gallon of water. While I stuck to my macros, which is the diet I’m following, I definitely need to plan my meals even more than I am especially when it comes to snacks.
